Abstract Starch molecules, like other polysaccharide molecules, are depolymerized by hot acids ( Chapters 1 and 4 Chapter 1 Chapter 4 ), the reaction becoming faster as the temperature is increased. Products of hydrolysis are known as converted products or products of conversion. The least converted starch products are acid-modified starches.
