The present invention relates to a manufacturing process of chewing gum compositions containing xylitol introduced in powder form as the polyol, by introducing into said compositions at least one anti-caking agent, preferably a specific surface BET of at least 20 m2 / g. The hardness of the chewing gum thus obtained is increased, such an increase is desirable, for example to prevent deformation centers to be coated in the coating of turbine or to improve sticks packaging rates. The anti-caking agent is being introduced as a direct additive in chewing gum or pre-mixed with the powdery xylitol. The powder composition of xylitol and anti-caking agent is also part of the invention.
