Factors affecting the heat denaturation of whey proteins in cows’ milk

The effects of changing protein concentration on the rates of denaturation of individual whey proteins have been determined. The level of denaturation was affected by protein concentration. Increases in concentration of micellar casein had no effect but a reduction in casein concentration promoted a significant decrease in the extent of whey protein denaturation.
