The immobilization of enzymes on electrified surfaces to reduce the progressive decrease of enzyme activity has recently generated an interest. The reciprocity between electrified surfaces and enzymes requires different experimental strategies to achieve a direct exchange, so the aim of this study is to determine: 1) the possibility of assessing the stability of the immobilized enzyme on a vitreus carbon electrode material surface modified with glutaraldehyde, and 2) its electrochemical evaluation, in order to establish the mechanism of mass transfer between the active sites of the enzyme and its natural substrate of agave comparing its potential to catalyze the reaction of hydrolysis of inulin under normal conditions of pH and inulin substrate.
