The article describes the main directions of scientific provision of oil and fat industry, carried out by SSI ARS-RIF of Russian Agricultural Academy, including developments of: innovative technological processes of vegetable oil extraction and processing providing their competitiveness by WTO accession, based on fundamental researches of cellular texture and seed platelet structure; wide range of oil and fat products considering modern requirements for fatty acid composition of fat products, content of biologically active components and by-products. The question has been discussed concerning properties and trends in application of selectively modified oil composition; usage of cake and meal being the richest sources of protein and biologically active substances in animal feeding.
