Study on Solid Fermentation Production Conditions of Pectinase from Aspergillus oryzae

This study was carried out on the fermentation and infusing conditions of pectinase from Aspergillus oryzae F-81 which was separated and purified from soy fermentor.The result suggested the optimum medium components in 15g solid culture were:orange peel powder 5.0g,(NH4)2SO4 3%,KCl 0.25%,the ratio for culture to water was 1:0.9.The optimum condition of infusing was 40℃,2 hours using physiological sault water as infuser,while the activity of pectinase could reach 2380U.
