Studies on the extraction and stability of Forsythia Anthocyanin

The extraction and stability of anthocyanin was studied with the petal of Weeping Forsythia.The result indicated that the optimum yield of anthocyan could be obtained by 95% ethanol and 1% hydrochloride at 45℃ for 7h.The pH had significant effect on the anthocyan.If pH is lower,the anthocyan was suituable to keep its good heat resistance.Na+,Cu2+,Ca2+ had no effect on the anthocyan,but Zn2+ had greater effect.The anthocyan had better oxidizability and worse reducibility.Glucose and Slucose had no effect on the anthocyan,but the citric acid had greater effect.
