Abstract The objective of this study was to explore the oxidative modification induced by AAPH (2,2′-azobis (2-amidinopropane) dihydrochloride) on the microbial transglutaminase (MTGase) cross-linking reaction and gelling properties of silver carp myofibril protein (SCMP).
