Brewer's Spent Grain, a major by-product of the brewing process, was investigated as a source of dietary fiber. Total dietary fiber and protein contents were found to be around 70 % y 20 %, respectively. Digestibility, biological value and net protein utilization showed good protein quality. It was found particle size (254 and 410 μ) to affect water and oil holding capacity by a direct relationship and ion exchange properties.
