The identification of meat species by isoelectric focusing (IEF) in gel of polyacrylamide, is a quick and accurate method that permits a good identification for closely related species. It also allows to establish the evidence of the addition of cheaper species in a fraud with economical, religious; ethical and health implications. In the present paper the method for the identification and quantification of mixtures of chicken, pork, beef, sheep, horse, turkey and duck is described. The results of several samples analysed in our laboratory are discussed. Isoelectric focusing methodology for the separation, identification and quantification of the proteins is used with a Pharmacia Phast System according to the application Note 380 of Pharmacia. Following this note staining of the gels is performed in the developing unit with Coomassie.
