Application of bioactive packaging technologies in extending shelf-life of meat and meat products

Bioactive packaging technology had a promising future in preventing the development and spread of spoilage and pathogenic microorganisms on the surface of fresh and processed meat products.Instead of mixing anti-microbial compounds with food directly,incorporating them in films obtained the functional effect at the meat surface by evaporation,equilibrium and migration.As a result,the shelf-life of meat products was prolonged and the safety was improved.Presently,bioactive packaging technology included adding a sachet into the package,dispersing bioactive compounds in the packaging materials,coating bioactive agents on the surface of the packaging material,utilizing anti-microbial macromolecules with film forming properties or bioactive edible films.
