The study on oxidation of kiwi fruit seed oil under heating condition

Objective and method:In order to develop and make use of kiwi fruit seed oil,and explored its processing performance,the acid value,iodine number,peroxide value of kiwi fruit seed oil have been determined under different temperature and different heating time.Conclusion:Result indicated that the impact of the temperature on iodine value is very notable,but little on acid;as for POV,the heating temperature should below 65 ℃.processing the temperature of kiwi fruit seed oil should below 65 ℃,at the same time,in order to prevent kiwi fruit seed oil from reaction such as oxidization and polymerization,antioxidant and retarder should be employed.
