Safety of using Rhizopus spp. in food industry

The safety of Rhizopus spp. was questioned when it was applied in fermented food due to its production of toxins.In this paper,the progress and current situation of toxins about Rhizopus spp. were summarized,and some new methods used in toxin study were introduced.The aim is to find the scientific methods of ensuring the safety of application of Rhizopus spp. in the fermented food.
