Humans and Appreciation of the Umami Taste

Umami is the main factor in controlling the taste of natural foods and contributes greatly to the palatability of foods. We have been studying the effects and qualities of umami for a long time. During this period, we have published many papers discussing the basic properties of umami and its effects on humans [1–3]. Here we discuss some recent findings regarding the special aspects of umami.
