The Langmuir-Blodgett (LB) technique for depositing ordered multi layers of organic molecules is briefly described and their possible applications to different scientifical technological fields are summarized. LB films deposited using a peculiar class of lipids has been characterized by X-ray diffraction (XRD) technique and their thermal stability has been investigated. Finally by comparing experimental data and theoretical calculations a molecular model based on the V-shaped configuration of the lipids is proposed.
