Influence of hydrolysis duration on the apple protopectin degradation at the flash extraction method has been studied. Influence of process duration lead to dissolution of high molecular aggregates into smaller molecules with narrow molar mass distribution enriched with galacturonic acid units, which provides useful information for the production of low cost pectin.
