Our study is devoted to the evaluation of the possibility of using wheat as a source of vegetable protein in the development of specialized foods for patients with type 2 diabetes to improve the bioavailability of the polyphenol complex of blueberries. This study was required due to the high content of wheat protein for the food matrix, and the experience of traditional medical systems in using this plant for diabetes prevention and treatment. In traditional medicine whole wheat grains are used in the treatment of diabetes, while crushed grains and flour are contraindicated. However, whole wheat should not be included in the composition of specialized foods. In addition, we have revealed high allergological risk of this type of grain. Therefore we do not recommend to use wheat as a vegetable source of protein to create a food matrix enriched with polyphenols.
