Risk Analysis: Risk Management: Application to Biological Hazards

As result of increases in certain foodborne diseases, the approach to food safety management, in particular the process of decision-making, has greatly evolved over the past two decades. Current risk management principles require a structured approach including examination of risk assessment data as well as consideration of risk communication principles. Decisions on control measures are also to be based on the evaluation of the entire food chain and examination of the risk management options from the perspective of both their ability to mitigate the risks to desired level of health protection as well as their practicality, economic feasibility, and acceptability by all stakeholders. Today's approach to risk management requires more transparency and accountability by stakeholders of the food supply chain. This has resulted in more sensitive and quantifiable metrics such as food safety objectives and performances objectives.
