Identification of Lactobacillus plantarum ZJQ and characteristics of bacteriocin ZJQ

A bacteriocin-producing strain was isolated from infant feces.With the morphological observation,physiological and biochemical characteristics and sequencing of the 16S rDNA,this strain was identified to be a gram-positive Lactobacillus plantarum.Bacteriocin activity was degraded by proteolytic enzymes (trypsin,proteinase K etc.),and it was stable at high temperatures (100℃,30 min),in a range of pH 2-4.The bacteriocin showed antimicrobial activity against Staphylococcus aureus,Escherichia coli,Salmonella species.
