Globally, fruit breeders and marketers create trademarked brand names for new varieties which can be protected indefinitely, extending returns on breeding investments. Brand names help promote and differentiate fruits, acting as quality signifiers and simplifying consumer choices. This study introduces brand name evaluation criteria, identifies name classification frameworks, and audits North American and international apple names, covering plant varietal denominations and both trademarked and non-trademarked names. Key criteria for a good brand name include trademarkability, memorability (simplicity, distinctiveness, meaningfulness, sound associations, mental imagery, and emotional impact), and marketability (appropriate brand image and marketing support). Two modified frameworks were used to classify apple names. The audit revealed that the prevalence of using ‘Namesake’ names associated with ‘Real or Fictitious Persons/Places’ has significantly decreased (North America: 4.9 times since the 1920s). The use of ‘Compounding’ names has remained frequent (North America: 25% in the 2020s). Some categories have seen an increased usage as follows: ‘Product Unrelated—Metaphoric’ (North America: 17.5 times) and ‘Unusual Spellings’ (not recorded until the 1980s, recently 6%) names. Since the 1960s, the following categories have remained consistent: ‘Sensory’, ‘Product/Benefit Related’, ‘Product Unrelated—Non-Metaphoric’, and ‘Blending’ names. The findings support fruit and vegetable industries in distinguishing their products through effective brand naming.
The combination of increasing ethnic diversity in North America and growing consumer support for local food products may present opportunities for local producers and processors in the ethnic foods product category. Our study examined the ethnic Chinese (pop. 402,000) market for salted and preserved duck eggs in Vancouver, British Columbia (BC), Canada. The objective of the study was to develop a segmentation model using survey data to categorize consumer groups based on their attitudes and the importance they placed on product attributes. We further used post-segmentation acculturation score, demographics and buyer behaviors to define these groups. Data were gathered via a survey of randomly selected Vancouver households with Chinese surnames (n = 410), targeting the adult responsible for grocery shopping. Results from principal component analysis and a 2-step cluster analysis suggest the existence of 4 market segments, described as Enthusiasts, Potentialists, Pragmatists, Health Skeptics (salted duck eggs), and Neutralists (preserved duck eggs). Kruskal Wallis tests and post hoc Mann-Whitney tests found significant differences between segments in terms of attitudes and the importance placed on product characteristics. Health Skeptics, preserved egg Potentialists, and Pragmatists of both egg products were significantly biased against Chinese imports compared to others. Except for Enthusiasts, segments disagreed that eggs are 'Healthy Products'. Preserved egg Enthusiasts had a significantly lower acculturation score (AS) compared to all others, while salted egg Enthusiasts had a lower AS compared to Health Skeptics. All segments rated "produced in BC, not mainland China" products in the "neutral to very likely" range for increasing their satisfaction with the eggs. Results also indicate that buyers of each egg type are willing to pay an average premium of at least 10% more for BC produced products versus imports, with all other characteristics equal. Overall results indicate that opportunities exist for local producers and processors: Chinese Canadians with lower AS form a core part of the potential market.
Apples are a global commodity worth $7.78 billion USD in international trade. Apple quality is a complex interdisciplinary topic. In studying consumer perception of apple quality, it is important to consider not only fruit characteristics, but other consumer-related and social environment-related factors. This chapter discusses three main factors that influence perception of apple quality: product-related, consumer-related and social environment-related factors, as well as their interactions. Product-related factors include intrinsic (e.g., appearance, texture/touch, flavor) and extrinsic (e.g., packaging design, consumer convenience, branding/trademarking) characteristics. Consumer-related factors include: psychological (e.g., food-evoked emotions, previous experience, neophobia, type of food, expectation) and physiological/biological (e.g., age, gender, overall health, sensory acuity) influences. Social environment-related factors include situational (e.g., time, physical surroundings), socio-cultural (e.g., cultural, lifestyle, purchasing habits, price) and economic influences. This chapter reviews the literature and presents schematic diagrams to assist readers in understanding the multidisciplinary topic of apple quality and the dynamic apple market.
